  • Don’t overmix! Overmixing the batter is the WORST thing you can do. If you continually turn out flat, heavy pancakes, it’s probably because of overmixing.   • Let it rest. Give the batter a few minutes to rest before pouring it into the hot skillet. This gives the baking soda and buttermilk time to do their thing.
